People need to know that they are being recorded or you may find yourself in a legal mess. Because you are mandated to live stream and record, it is NOT acceptable to pause recording at the special requests of guests.
Download the "Notice PDF" and post it in several conspicuous locations near your meeting. You might also want to start your meeting with a PSA and give people the option to leave if they don't agree to being recorded.
TEST IT! Testing hardware and recording quality before your meeting can save you a ton of stress.
